If your a mom of toddlers, you probably get frustrated with the seemingly incessant need for a toddler to be eating. I get that they are little bundles of energy on the move constantly. But my two year olds eat fabulously. They get real food at every meal. Their meals have healthy fats, are nutrient dense, and taste fabulous. Yet, they still want more.
With all the talk of the Ketogenic diet on the internet, I decided to whip up a batch of fat bombs and see if it would satisfy our little ones. One thing about fat bombs is that you don’t seem to be able to mess up the recipes. Every fat bomb recipe I’ve made, our little kids have scarfed them down and it really does seem to tide them over until the next meal.
Blueberry Coconut Fat Bombs
1/2 cup frozen or fresh blueberries
1/2 cup coconut milk
1/2 cup butter
1/2 cup melted coconut oil
Stevia- add enough to taste (you can also just use honey)
Blend and pour or spoon into molds and place in the freezer
If you don’t have a mold, just drop them on a cookie sheet by the spoonful.
*Keep in mind, this recipe is very, very flexible. If your dairy intolerant, just leave out the butter. If you don’t have blueberries on hand, use any other fruit.
